Although school has started and summer is nearing its end, we have not dipped into the darkness of winter yet. There is still time to enjoy fall favorites like apples and raspberries. A lot of people do not know that raspberries have both a summer and a fall season here in Minnesota, so if you are like me and were too busy picking strawberries in June and blueberries in July, there is still a chance to pick fresh raspberries. If you time it right, you might be able to pick both apples and raspberries in the same day at the same farm. Be on the lookout for fun pink and yellow raspberries in addition to the common red variety.
My favorite dessert to serve with raspberries that is both light and simple is a raspberry trifle. Bake a white cake in a 13x9-inch baking pan. Tear cake into pieces and layer cake, whipped cream, and raspberries. Repeat pattern until trifle dish is filled. Grate a dark chocolate bar over the top or get fancy and use chocolate curls.
